Smoked Salmon Roulades.
Spread a little of the
Lochaber Smoked Cheese onto a slice of Smoked Salmon and role it into a
roulade. Serve as is with a tossed salad with a slice of lemon.
If you are using the roulades as canapés then cut the roulade into three pieces and simply garnish with lemon slices and a little rocket or water cress.
Smoked Trout and Avocado.
Avocado makes a wonderful accompaniment with smoked food, especially so with Smoked Trout.
Cut an avocado in two. Remove the stone and peel off the skin. Slice the avocado.
Remove
the skin from a roast smoked trout. This should peel off like a glove.
Separate the trout meat from the bone. You will find that this comes
away very easily using a small knife to literally scrape it from the
bone. Fan the avocado on a plate and arrange the trout beside it. A
little hollandaise sauce gives the dish a fantastic lift.
Stuffed Smoked Trout Fillets.
Cut two or three
pockets diagonally into the flesh of a smoked trout fillet. Stuff the
pockets using very finely chopped mushrooms and Lochaber Smoked Cheese.
Soften a little butter and add some fine chopped parsley or dill.
Spread this over the trout and pop under the grill for a couple of
minutes…. Quick and easy and a delightful meal.

Smoked Duck with Avocado.
Prepare the
avocado as with the smoked tout and avocado recipe. Slice the smoked
duck thinly with a sharp knife and arrange a fan of the duck beside a
fan of avocado and garnish with a teaspoonful of cranberry or red
current jelly.
Locheil Smoked Brie and Ciabatta Toasties.
Slice
some Locheil Smoked Brie onto slices of Ciabatta bread spread with a
little cranberry jelly and place under the grill to lightly melt the
Brie.
Lochaber Smoked Cheese and Scrambled Eggs.
Next
time you make scrambled eggs try adding some Lochaber Smoked Cheese to
the eggs. This gives a wonderful creamy texture, light smokey flavour
without being too cheesy.
